    • Healthier Ranch Dressing or Dip

      For the ranch addicts

      So I am not going to pretend that this recipe will taste exactly like your store-bought bottle of ranch. But I’ll tell you what? It’s pretty dang good. Minus all of that artery clogging goop.

      Made with soybean oil and has insane calories in just 2 tablespoons (140 cal). Who the heck only uses 2 tablespoons? Certainly not me.

      On to the recipe:

      Start with a pint of plain greek yogurt

      Loads of calcium, no sugar.

      Recipe 1: 10 minute recipe

      • 1- 16oz container plain, greek yogurt
      • 2 tablespoons organic dill, finely chopped
      • 4 teaspoons organic parsley, finely chopped
      • 4 teaspoons lemon juice
      • 2 teaspoon sea salt
      • 2 teaspoon celery salt
      • season with pepper to taste

      Mix well in a separate bowl. Creamy baby!

      IF THE ABOVE IS A LITTLE TOO AMBITIOUS FOR YOUR HOUSEHOLD, THERE IS STILL HOPE. SEE BELOW:

      Recipe 2: 1 minute recipe

      • 1-16 oz container plain, greek yogurt
      • 1 packet Hidden Valley Ranch seasoning
      Mix well in a separate bowl. Easy.

      Right near the croutons at your grocery store. No excuses. Oh and skip the croutons. Those will sabotage your salad.

      Place this on your table with a pile of cut up veggies and I guarantee people will be munching.

    • Super easy hummus

      Just finished licking the spatula from this fantasticly easy hummus. With hummus this fast there is really no reason to not make this healthy dip. This recipe is from Dr. Oz. If you do not DVR him, you really should start. Like tomorrow. He is all about nutrition for disease prevention. I want him as a BFF.

      Super easy hummus

      • 1 can garbanzo beans (keep the liquid! you will need it)
      • 1/2 cup tahini *tahini:  sesame seeds (in paste form) That’s it, a fancy name for sesame seeds! Look for it in the health food section of your grocer, right next to the peanut butter. Tahini rocks because it boasts a whopping 30% of your daily calcium requirements in just one serving. Buy it. Try it.
      • 1/3 cup olive oil
      • 2 tablespoons lemon juice
      • 1 clove garlic
      • salt and pepper to taste
      • paprika to taste

      Place all of your ingredients in a food processor (except for the liquid from the garbanzo beans). Process, and stop to scrape down periodically. Slowly add bean liquid until it reaches your desired consistency.

      Kids are always hungry. At least mine are. Always seems to happen when it’s post-afternoon-snack-but-its too-early-for-dinnertime. I try to beat them to the punch when I can. I find that if you stick a plate of veggies in front of them, 9 times out of 10 they will eat them. Although it is “mindless” eating and that tends to be taboo these days, I am a-okay with mindless veggie consumption.       My kids approved. As a matter of fact, they used spoons for final scooping. That’s a good sign. 

      Super simple.  With an entire can of beans for protein, this has nothing to feel bad about, other than potential garlic breath. 

      Tuscan Bean Dip

      Ingredients:

      1 can cannellini beans (basically white kidney beans), rinse and drain the goop. yuck!

      2 tablespoons balsamic vinegar

      2 teaspoons extra virgin olive oil

      2 tablespoon chopped, fresh basil OR dried basil (but reduce…fresh to dry ratio is 3:1)

      1/2 teaspoon sage, fresh, chopped

      2 cloves minced garlic

      1/8 teaspoon red pepper flakes 

      ground pepper 

      1/4 teaspoon kosher salt


      In a medium bowl, mash the beans with a hand-held potato masher. Stir in the next 6 ingredients. Season to taste with the salt and pepper. Serve with cold veggies for a winning combination.

      It might not be pretty, but it more than makes up for it  in flavor.
