      Banana Pineapple Chia Smoothie

      Banana, pineapple, and chia in my smoothie? Yes, fab.

      Banana, Pineapple and Chia Smoothie  

      • 3 cups cut pineapple chunks
      • 1 1/2 cups almond milk
      • 1 1/2 frozen bananas
      • 1 tablespoon chia seeds (optional, but chia is so good for you, just buy it and use it already)
      • 1/2 tsp vanilla
      • 1 tablespoon honey
      • 1/2 cup ice cubes

      1. In a blender, combine all ingredients. Blend until smooth.

      Extra pineapple? Make a pretty garnish for the side.

      A break from cooking. Had an idea.

      Cute pot, right?

      Cute pot, right? No, we didn’t make the pot. Just the pineapple flower on top.

      Mr. Foodie Call got one of those Edible Arrangements a couple of months ago from the women at work for Boss Day, Manager Day, whatever it was… Edible Arrangements. Those insane fruit bouquets that you can eat? Well, Mr. Foodie Call got one. The family devoured it. Very cool gift.

      We actually have never really gotten one of those as a gift or have even bought one. They always seemed so expensive.

      When Mr. Foodie Call’s fruit arrangement was kicked, I started to dissect it to see how they put it together and what it entailed. It really did not look hard. And it wasn’t. A couple of kabob sticks, some foam, fancy cut fruit…not too bad. Long story short: The kids decided they wanted in on this fruit cutting thing and the Fruit-Teacher-Pot idea was born.

      Ours is a toned down Edible Arrangement with one change. Instead of a throw away pot, I decided to use a really cool mixed media stone pot to set it in. That way the teachers could have an actual gift to keep. These pots are my new obsession.

      These are the mini pots. They hare available in mini, small, medium, large, and extra large. I'm obsessed!

      The kids and I made 8 fruit arrangements, all with these mini pots.

      My oldest has 5 teachers. These would have taken FOREVER had we gone with a larger size.

      The arrangements varied quite a bit based on the cuts and how sick of making them the kids were. :)

    • A Super Easy Winter Salad…with Pears and Candied Walnuts

      We all love fruit in salad.

      Pears are one of those things that usually show up in salads around this time of year.

      A winter or holiday thing, right?

      Thought it was fitting that I add a post with a pear salad. Great for your holiday gathering. Or for whenever.

      A Super Easy Winter Salad

      …with Pears and Candied Walnuts.

      Sweet.

      Horrible lighting. Apologies. Salad still rocked though. Mr. Foodie Call did a few approving grunts while he ate this.

      My usual “pictorial” play-by-play of the recipe.

      Toast and "candy up" those walnuts.

      Whisk up your dressing.

      Stir up your dressing.

      Pick your pears.

      Buy 2 bags of spring mix. Organic of course.

      Pour your dressing on your goods.

      Sprinkle with walnuts.

      Winter Salad with Pears and Candied Walnuts

      The Walnuts:

      • 1 teaspoon grapeseed oil
      • 1/2 cup chopped walnuts, toasted
      • 2 teaspoons sugar

      The Dressing:

      • 1/2 cup pomegranate juice
      • 2 Tbs. white wine vinegar
      • 2 Tbs. extra virgin olive oil
      • 2 tsp honey mustard
      • salt and pepper to taste

      The Salad:

      • 2- 5 oz bags of mixed greens
      • 2 pears, cored and chopped

      Directions:

      1. For the Walnuts: Heat oil in a skillet over medium heat. Add nuts and sugar. Cook for 3-4 minutes, stirring constantly. Remove from heat.

      2. For the Dressing: Whisk together all ingredients

      3. For the Salad: Combine greens and pears in a bowl. Drizzle dressing over salad and toss. Sprinkle with nuts.

      If anything, make this for the dressing. Super tasty and super healthy.

    • Waffle Banana Sandwiches

      Kind of like a “waffle banana split” minus the ice cream. hmm…maybe for another post.

       

       

      Getting started:

      Thaw your berries and save those juices.

      Thaw frozen berries and save those juices.

      Gather up some chocolate chips.

      Thin-slice your bananas.

      On to the waffles.

      Make them as instructed by your waffle maker.

      Or you can use store-bought waffles. Just make sure you buy something whole grain!

       

      Ingredients 

      • 2 waffles
      • Bananas (sliced long)
      • Frozen strawberries (thawed so that you can take advantage of their juices)
      • Chocolate chips
      • Maple syrup (optional)

       

      1) Stack bananas, chocolate chips and strawberries on one side.

      At this point you can either drizzle remaining strawberry juice or add optional maple syrup.

      Or add more chocolate chips for good meausre. Nom, nom, nom.

      2) Devour. Kids like these babies.
