      Banana Almond Pancakes

      Do you like banana pancakes? Almonds?

      Try this pancake recipe that combines the two.

      Ingredients

      • 2 cups almond meal (Find this at Trader Joe’s for dirt cheap, Whole Foods for super expensive, or make your own by grinding almonds down in your food processor until it is powdery like flour.)
      • 1 cup white whole wheat flour
      • 1 tsp cinnamon
      • 1 tsp baking powder
      • 1/2 tsp salt
      • 2 ripe bananas (A great way to sweeten recipes. Keep those brown bananas!)
      • 4 eggs
      • 2-3 Tbsp honey
      • 1/2 cup almond milk
      • coconut oil for cooking

      Instructions

      1. In a large bowl, combine the almond meal, flour, baking powder, cinnamon and salt
      2. In a separate bowl, mash the banana, then whisk in the eggs, honey, and milk.
      3. Combine wet and dry ingredients, but do not over do it. Just until combined, okay?
      4. Heat your pan to medium-low heat, and melt your coconut oil on it.
      5. Spoon your  batter into 2-3 inch circles, and cook until the edges lift.
      6. Flip, and cook.
      7. Serve with syrup, peanut butter or yogurt.
      We did all fruit jelly for a change of pace....

      Is it a carrot cake? A cookie? A granola bar? Unsure, but good anytime.

      Is it carrot cake? A cookie? A granola bar? Unsure, but good anyhow.

      I love carrot cake, minus the raisins.  Love raisins, just not in my cakes, cookies, or any other baked goods. They just do not belong there. Kind of like walnuts do not belong in brownies. Love walnuts, but just don’t mess up a moist brownie with a nut. Just my opinion.

      My daughter was freaking out when she saw these pressed into the pan. "Aren't you going to chop the carrots more???"

      I think she actually ate the most of these.

      End result? Of all the My Foodie Call family members, I think she actually ate the most of these. Probably should add more carrot next time.

      Flourless Carrot Cake Bars

      Ingredients

      • 2 1/2 cups rolled oats
      • 1 1/4 cup almond meal
      • 1 cup sugar
      • 2 teaspoons cinnamon
      • 1/2 salt
      • 1 teaspoon baking soda
      • 1/4 teaspoon baking powder
      • 1 egg
      • 1 teaspoon pure vanilla extract
      • 1 cup unsweetened applesauce
      • 1 cup shredded carrots

      Directions

      1. Preheat the oven to 350 degrees. Spray a 9×13 in pan with non-stick spray.
      2. In a large bowl, mix together the oats, almond meal, cinnamon,  salt, sugar, baking soda, and baking powder until they are well-combined.
      3. Add the egg, vanilla, and applesauce to a small bowl and whisk until combined.
      4. Add to dry mixture and stir until fully incorporated.
      5. Stir in the carrots.
      6. Spread into prepared pan and bake for 14-18 minutes.
      7. Cut into squares.

      When I get tapped out of breakfast ideas for the kids, I get the creative juices flowing and take a peek in the cupboard. I had some almond meal from Trader Joes that I was almost gone so I figured I would make some sort of baked good with that. Found some frozen blueberries….and a little white whole wheat flour…. Ok, blueberry muffins. Done.

      Except when I look a bit further for my cupcake liners I have two left.  I can almost hear the wah wah wah in the background.

      Shift breakfast idea….Bread. Done. Not banana bread. Kids will kill me. Hence the birth of the:

      So not your grandma’s banana bread.

      This actually turned out better than I thought they would.

      Here is how things went:

      First my liquids...If your coconut oil is solid, you will need to melt it down a bit in the microwave.

      Whisk in your almond flour for an extra shot of protein.

      You have heard of white whole wheat flour, right? Still has the nutrients, but can fool the naysayers a bit.

      Keep stirring until combined. It will get thick and dough-like.

      Blueberry Crumble Breakfast Bread

      Ingredients:

      2 eggs
      1/3 cup honey
      3 tablespoons melted coconut oil
      1 teaspoon vanilla
      1 teaspoon baking soda
      1/2 teaspoon sea salt
      1/2 cups almond flour (ground up almonds or Trader Joe’s has a fantastic inexpensive almond meal)
      2 cups white whole wheat flour
      2/3 cup frozen blueberries

      Procedure:

      1. Preheat oven to 350°F. Spray a standard loaf pan.
      2. In a medium mixing bowl use either a whisk combine the eggs, honey, butter, vanilla, baking soda, and sea salt.
      3. With a spatula fold in the almond flour and 1/3 cup blueberries.
      4. Batter will be very thick like cookie dough. Stir baby! Spread into loaf pan.
      5. Top with remaining 1/3 cup blueberries.
      6. Bake for 34-38 minutes.  Toothpick should come out clean. Let it cool a bit before slicing.
