    • Chilled Chocolate Oatmeal Chewies

      Need a fast dessert idea? See below.

      Start with this.

      Get melting.

      Get choppin.

      Get chopping.

      Mix the two.

      Mix the two.

      Add the rest.

      Add the rest of your stuff.

      Mix well.

      Pop the whole thing in the freezer

      Chilled Chocolate Oatmeal Chewies

      Ingredients:

      • 1 cups rolled oats
      • 1/2 cups Ghirardelli dark chocolate chips
      • 2 ripe bananas (don’t be afraid of the brown ones)
      • 2 tsp pure vanilla extract
      • 2 tbsp chia seeds
      • 2 tablespoon agave nectar

      Directions:

      1. In a microwave safe bowl, melt the chocolate chips for about 60 seconds. Stir. Repeat with 15 second intervals until mostly melted.

      2. Fine chop the banana and mix in with the chocolate.

      3. Stir in with the rest of the ingredients until fully incorporated.

      4. Line a muffin tin with 12 muffin liners. Freeze for about 1 hour or until firm.

      Chocolate & Oats. Kind of obsessed.

      Make em and freeze em.

      That way you can attempt the one at a time thing.

    • A Valentine’s Pizza for you Pinterest rejects out there

      Have you seen the overachieving moms on Pinterest that do these insane Valentine things too pretty to eat?

      Yah, well…I’m not one of them.

      I doubt I could ever make something so pretty.

      If you are a Pinterest reject like me and don’t want to feel like you have failed your kids in the fun-mom category, listen up. Valentine’s heart pizzas. So that it looks like you tried. A little.

       

      This is the cheater method.

      This is what I did last year for my kids’ lunches. Sorry the picture is downright horrible. This was a quick snapshot that I took on my phone to send to the My Foodie Call grandparents in the Northeast.

      Start by buying a "100% Whole Wheat Boboli."

      “100% Whole Wheat Boboli.”

      1) Cut your uncooked crust into 4 equal triangle wedges.

      2) With the tip of a sharp paring knife, carve out the top edges of your crust in the shape of a heart.

      3) Top with sauce and cheese.

      4) Cook according to package directions.

      5) Told you it was easy.

      Cut your pizza into 4 large wedges

      I did this with pizza dough a few years ago, but the cheater method is a 1000X  better (and easier).

    • Slow Cooker Blueberry Applesauce

      Blueberry applesauce (even when it's not in season)

      Blueberry applesauce

      Bought a bunch of apples. Like 3 bags. Just felt like it. Here is where some of them went.

      Slow Cooker Blueberry Applesauce 

      Ingredients

      • 2 lb bag of organic apples (I used pink lady) Core them, slice them, and leave the peel on because yes, you bought organic, right??
      • 1 cup frozen blueberries
      • 1  box apple juice
      • 1 tablespoon fresh lemon juice
      • 1 teaspoon pure vanilla extract (not the fake stuff!)

      Directions

      1. Add all ingredients to your pre-sprayed slow cooker.
      2. Cover, and cook 3 hours on high or 5 hours on low, until apples are soft.
      3. Slowly add your contents into your food processor. It will be hot, so go slow. Pulse until desired consistency.

    • Brown Rice Noodles with Garlic and Kale

      It happens…I’ll see something at Whole Foods or wherever that will catch my eye, I’ll buy it and then said product sits in the cupboard…a long time. Sound like your house?

      I dusted off the box finally and went to work. Not to worry, it hadn’t expired.

      Cooked up a tiny bit of kale. Not too much...didn't want to scare any picky eaters away.

      Brown Rice Noodles with Garlic and Kale

      Ingredients

      • 1/2 cup cilantro leaves, fine chopped
      • 6 cloves garlic, minced
      • 2 tsp ground ginger
      • 1 tsp turmeric
      • 1 Tbsp coconut oil
      • 1-14 oz. can light coconut milk
      • 1 juice of one lime
      • 1 Tbs. coconut oil
      • 2 cloves garlic, minced
      • 2 Tbs. low-sodium soy sauce
      • 2 cups chopped kale
      • ¼ cup chopped roasted peanuts

      Directions

      1. Add cilantro, garlic, ginger, turmeric, and oil to your food processor bowl and process until green paste forms. (you may need to stop and scrape the bowl down)

      2. Heat saucepan over medium heat. Add cilantro mixture, and cook on low for 30 seconds. Stir in coconut milk. Simmer for 15 minutes, stirring every once in a while. Stir in lime juice, and season with salt and pepper, to taste.

      3. Cook noodles according to package directions.

      4. Heat oil in pan over high heat. Add garlic, and stir-fry 20-30 seconds. Add kale, and cook 1 minute. Add  soy sauce and stir fry for 1 more minute or until kale is lightly wilted.

      5.  Add kale to the noodles. Slowly pour in coconut sauce and mix well.

      6. Serve noodles topped with chopped peanuts.

      Love anything with chopped peanuts.

      I have been meaning to write about this for a while now but in my mind it seemed too lengthy and mentally taxing to write. I could go on and on about this subject ad nauseam… Seriously, it makes my head hurt to even think about condensing this. This discussion could be days long. Who has time for that. Here goes my oversimplification.

      Propaganda.

      The media.

      The diet industry.

      The wellness claims.

      How much do you fall prey to the claims?

      We all do, including myself. I found and bought myself Dark Chocolate Multi Grain Cheerios the other day because, “hey dark chocolate is better than regular chocolate, so it must have more nutritional benefits, right?”

      It’s an easy trap to fall into and usually I can do pretty okay.  I am a firm believer in flipping the package. ALWAYS. Never believe the front. Although at home, upon further inspection, my Cheerios had zero dark chocolate. Yes, things could be worse. I could be buying Cocoa Pebbles or something, but you get the point.

      Let’s start our mini lesson shall we?

      I am pretty certain any educated adult can recognize when they are being sold to and enticed by a Kohl’s 2 day power sale, but how often do you recognize “diet” and “wellness” propaganda?

      (P.S. There is a mini assignment at the end so be sure to pay attention, okay?)

       Ritz Crackers

      Seems harmless, right? Says, whole wheat on the front. Claims "5g whole grain". What does that even mean??? They are going to the bank that you do not know or even care.

You say, “hey, its whole grain, it must be good for me, right?” Let’s flip the box and take a closer look…

      Do you see anything whole wheat about this ingredient list?

      Do you see anything whole wheat or whole grain in this ingredient list? Not sure about you, but I see a whole lotta partially hydrogenated this and corn syrup that. And this cracker is definitely more than 5 ingredients. We do not do this anymore right? We have evolved!

      Lovely Chef Boyardee. Oh be still my heart.

      Hilarious. Since when does slapping the label "whole grain" on Chef Boyardee make it healthy? I applaud their efforts, but seriously? I'd rather give my kids plain white pasta than this sodium-laden canned goop.

      “Healthy butter”. How many of you have bought into this?

      Olive oil butter. As if it magically makes it healthy. "Olive oil". Oh right, that's the stuff that's good for my heart, right?? Wrong. Media= 1 You= 0.

      Oh and this one is the best. Total identity crisis on this label.

      This company is throwing every health claim at you at once. Words like "light" and "extra virgin olive oil" and "omega 3" and "Vitamin E". Wow, all of these things in one tub? Might as well eat it  in one sitting.

      The next time you shop, find 5 diet and wellness products that are being marketed towards an unsuspecting consumer (you). Don’t worry, you can still buy your Omega 3 peanut butter, JUST BE AWARE.
