      Love a good edible bowl. Sourdough bread bowls filled with soup,  lettuce cups, or even my lentil stuffed delicata squash recipe…

      Today’s edible bowl is the oh so cute acorn squash. This recipe is similar in concept to the delicata recipe, but different flavors. Still easy and healthy.

      Start with your stuff. A few basic ingredients. Acorn squash, black beans, green chilis, black olives, and salsa.

      Slice up your squash.

      Scoop out your seeds.

      Mix your stuff.

      Line up your squash on a baking sheet.

      Fill your roasted acorn bowls.

      Top with cheese and roast.

      Top with cheese and pop it back into the oven for 10 more minutes.

      Add "healthy chips" around the sides and devour.

      Taco stuffed acorn squash bowls

      • 3 acorn squash
      • 1 can organic black beans, rinsed and drained
      • 3/4 cup-1 cup salsa
      • 1-4 oz can diced green chiles
      • 1-3. 8 oz can sliced black olives
      • “healthier” tortilla chips (Look for something low-sodium with the most amount of fiber. The brand Food Should Taste Good has many great chip options for this recipe)
      • shredded cheese of choice
      1. To roast acorn squash, set your oven to 350 and roast for about 35-45 minutes. I normally roast cut side up, but people do it several ways.
      2. While your squash is roasting, combine beans, salsa, green chiles, and black olives in a bowl and mix to incorporate.
      3. Add cheese to the top and bake for 10 minutes to melt the cheese.
      4. Add chips. Serve it up.
      Don't forget to eat your bowl :).

    • One-Pot Cauliflower and Squash Penne Pasta

      One pot meals are awesome. Less dishes=less work.

      I got this recipe from Eating Well. Although I modified a tiny bit on the veggies.

      Fast meal on the fly.

      I modified the recipe slightly on the veggies to cut out some chopping time. Time saver!

      Cauliflower and Squash Whole Grain Penne

      Ingredients:

      • 1 tablespoon grapeseed olive oil
      • 3 large cloves garlic, minced
      • 1 teaspoon dried thyme
      • 1/4 teaspoon crushed red pepper
      • 4 cups vegetable broth
      • 8 ounces whole-wheat penne (about 3 cups of dry pasta)
      • 1-12 oz package cauliflower florets (if they are large, break into 1 inch pieces)
      • 1-12 oz package peeled and cut butternut squash
      • Freshly ground pepper to taste
      • 1/2 cup finely grated parmesan cheese

      Directions:

      1. Heat oil in a large saucepan over medium-high heat.
      2. Add garlic, thyme and crushed red pepper and cook, stirring, for 1 minute.
      3. Add broth, penne, cauliflower and squash. Bring to a boil over high heat.
      4. Reduce heat to low and cook, uncovered, until the pasta is tender and the liquid is thickened. 12 to 14 minutes.
      5. Remove from heat, stir in pepper and let stand for 5 minutes.
      6. Serve topped with cheese.
