    • Easy Whole Wheat Biscuits

      Hi All!

      I am back from the Thanksgiving craze. Although I call it a “craze”, it really wasn’t too bad. I think this year was a perfect blend of eating,  activity, and relaxing. I will not bother to share any of my “Thanksgiving recipes”, because my guess is that nobody cares :). We are all over Thanksgiving and ready for Christmas, am I right?

      That said, my daughter was the star in today’s post. She made this recipe that we found  from 100 days of real food. They are whole wheat biscuits, whole wheat= great, and only a few ingredients. The original recipe is here.

      Whole Wheat Biscuits

      Here is the recipe. The only change from the original recipe is that she made them with almond milk.

      Ingredients

      • 2 cups whole wheat flour
      • 4 teaspoons baking powder
      • ½ teaspoon salt
      • 4 tablespoons cold unsalted butter
      • 1 cup almond milk

      Directions

      1. In a medium-sized bowl combine flour, baking powder, and salt. Mix well with whisk or fork.
      2. Cut the ½ stick butter into small pieces and then mix into the flour mixture.
      3. Using a fork, try to mash the butter pieces as you mix it together with the flour until it resembles coarse crumbs.
      4. Then pour in the milk and mix it all together. Knead the dough with your hands 8 to 10 times and then turn out onto a counter or cutting board.
      5. Pat it out flat with your hands until the dough is a somewhat even ¾-inch thickness (sprinkle with a little flour if necessary).
      6. Turn a mason jar upside down and cut out biscuit rounds.
      7. Then put them on an ungreased baking sheet.
      8. Bake at 450 degrees for 10 – 12 minutes or until lightly browned.

    • Whole Wheat Veggie Dog Muffins

      Made these dinner muffins and added a kid-friendly, veggie-dog-center.

      Use your all-beef hot dogs in there all you non-vegetarians.

      Don’t like veggie dogs? Captain Obvious says to use your all-beef hot dogs in this recipe instead. 🙂

      This recipe is adapted from this cornbread recipe, over at lunchboxbunch.com

      Whole Grain Veggie Dog Muffins

      Ingredients

      • 3/4 cup almond milk (or other non-dairy milk)
      • 2 cups whole wheat pastry flour
      • 4 tbsp. nutritional yeast
      • 1 teaspoon cinnamon
      • 1/4 tsp salt
      • 1 tsp baking powder
      • dash of baking soda
      • 1/2 cup maple syrup
      • 1/2 cup vegan butter, (or regular if you are not needing a vegan recipe)
      • 1/2 cup unsweetened apple sauce
      • 3 veggie dogs
      • muffin liners or cooking spray for muffin tins

      Directions:

      1. Preheat oven to 375 degrees.

      2. Prepare your muffin tin with liners or spray with non-stick cooking spray.

      3. In a mixing bowl, add the dry ingredients and mix well.

      4. Add in the liquids. Fold to combine.

      5. Pour into prepared tin.

      6. Cut each veggie dog into 4 sections, so you should wind up with 12 small pieces.

      7. Place one veggie dog in the center of each tin, pressing down so that the batter surrounds the piece.

      8. Bake  for 23-25 minutes – or until edges become browned.

      Totally portable, too. These have been known to show up in my kids' lunches.

    • Molasses Chocolate Chip Cookies

      Molasses.

      Either you love it or hate it.

      I love it and I am always looking for ways to get more calcium into the body. Did you know that blackstrap molasses has calcium?

      Never mind the calcium. These cookies have a ton of other awesome ingredients.

      Just take a look at that list. Begging to be made!

      Molasses Chocolate Chip Cookies

      Ingredients:

      • 1/4 cup grapeseed oil (or canola)
      • 2 tbl of dark molasses
      • 1/2 cup honey
      • 2 eggs
      • 2 tsp pure vanilla extract
      • 1/2 cup almond meal
      • 1 cup whole wheat flour
      • 1 cup flaxseed meal
      • 1/4 tsp powdered ginger
      • 1 bag Ghirardelli 60% dark chocolate chips
      1. Preheat oven to 300 degrees.
      2. Whisk together the oil, molasses, honey, eggs, and vanilla.
      3. Add almond meal.
      4. Then stir in flaxseed meal, flour, ginger, and chocolate chips. Combine well.
      5. I made these babies big. Drop heaping spoonfuls onto your prepared baking sheet. (I use parchment, but you could grease it)
      6. Bake 18-20 minutes.
      7. Cool for 10 minutes before transferring to a wire rack.
      They were moist, but not crumbly.

    • Whole Grain Banana Nut pancakes

      Story goes like this.

      Mr. Foodie Call goes on a ridiculously long bike ride…like 40 miles or something. No thanks.

      Anyhow,  I know the way to his heart is to have a nice breakfast waiting for him when he gets back from said ridiculously long bike ride.

      Although I can’t always make that a reality, when I can I try to hook a brother up. He loves Banana Nut Pancakes. The kids? They tend to balk at the idea of banana in their pancakes, and even throw mini tantrums at the idea of walnuts topping their pancakes.

      Luckily those nuts are easy enough to omit because they are not directly in the pancake. I kept the bananas in the pancakes, but not as a topping. A compromise.

      Banana Nut Pancakes

      INGREDIENTS

      • 1 cup whole wheat flour
      • 1 cup rolled oats
      • 1 tablespoon baking powder
      • 1/2 teaspoon salt
      • 1 egg, beaten
      • 1 teaspoon cinnamon
      • 1 tablespoon honey
      • 1 cup almond milk
      • 1 teaspoon vanilla extract
      • 1 banana, finely chopped (for the batter)
      • Cooking spray for pan
      • 1/4 cup walnuts, chopped
      • 1 banana, sliced (for topping)

      DIRECTIONS

      1. In a bowl, mix the flour, oats, baking powder, salt, egg, cinnamon, and honey.
      2. Stir in the almond milk.
      3. Stir in the bananas.
      4. Spray your skillet.
      5. Pour batter into 4-inch-ish circles. Flip when bubbly.
      6. While the pancakes are cooking, hand chop the walnuts on a cutting board with a sharp knife.
      7. Slice another banana for topping.
      This is two pancakes, layered with bananas and chopped walnuts.
