    • Back in First Grade: A Healthy Holiday Treat.

      So I went back to Laurel Hill. Remember when we did the Pumpkin Smoothie Challenge? Well, back for another hands on treat. This one might look familiar from a couple of weeks ago. Remember the Avocado Chocolate Pudding?

      Went to Laurel Hill and used the same recipe except to give it a holiday twist we crushed peppermints as an optional topping for the Avocado Chocolate Pudding.

      Same technique that I used for my Healthy Holiday Ice Cream Sandwiches.

      Add your mints to your processor.

      Back to Laurel Hill…I made the “health lesson” for this visit on avocados. Good fats. Bad Fats. Easy. You know that green scares the kids :). 

      Needed to make a large batch. 19 kids means quite a few avocados.

      I first had them do our sweet topping.

      All of the kids lined up and got a turn adding mints to the food processor. I especially like the Trader Joe's mints because there is no gross red dye in them. Score.

      We cut, we measured, we scooped. We added a little of this and we added a little of that…

      We tripled our recipe and got 22 cute little pudding cups.

      As mentioned above, I began the lesson by explaining about good fats and bad fats.

      By the end?

      Happy to say that 100% of the kids could pronounce the word “Mono-unsaturated”.

      Mission accomplished.

    • Healthy Chocolate Chip Waffles for teen girls

      Food is always an interesting discussion when the My-Foodie-Call kids have friends over.

      There is always lots of negotiating when it comes to food. They are always worried about my serving “embarrassing food”. Sad that REAL food equates to embarrassing. I try to compromise, but refuse to conform.

      So we had 5-thirteen year old girls at our house Friday night.

      What to serve. Hmmm.

      While I did negotiate and order pizza and soda, you better believe it came paired with cut up veggies and hummus.

      (Not that they even touched it :)….)

      Breakfast was a different story…

      Love waffle makers.

      The My-Foodie-Call daughter wanted waffles for breakfast.

      She got waffles for breakfast.

      This recipe satisfied 5 hungry teenagers.

      Healthy Chocolate Chips Waffles

      • 1/3 cup butter, melted
      • 1/3 cup coconut oil
      • 2 cups almond milk
      • 2 eggs, beaten
      • 4 tablespoons orange juice
      • 2 teaspoons vanilla extract
      • 3 cups whole wheat pastry flour
      • 4 teaspoon baking powder
      • 1 teaspoon salt
      • 4 tablespoons  sugar
      • Dark Chocolate chips

      Instructions

      1. Melt butter and coconut oil in the microwave.
      2. In a medium bowl, add butter/coconut oil mixture to milk, eggs, orange juice and vanilla.
      3. In a large bowl, mix dry ingredients.
      4. Combine wet and dry ingredients.
      5. Stir until combined. It will be a tad lumpy. Try not to over stir.
      6. Spoon batter onto heated, sprayed waffle iron.
      7. Sprinkle batter with chocolate chips.
      8. Bake until golden brown.

      I made a bunch and kept them warm in the oven until the girls were ready.

      They were a hit. Think it was the chocolate.

      Chocolate chips make everything better.

      These are great as is or with maple syrup.

    • Molasses Chocolate Chip Cookies

      Molasses.

      Either you love it or hate it.

      I love it and I am always looking for ways to get more calcium into the body. Did you know that blackstrap molasses has calcium?

      Never mind the calcium. These cookies have a ton of other awesome ingredients.

      Just take a look at that list. Begging to be made!

      Molasses Chocolate Chip Cookies

      Ingredients:

      • 1/4 cup grapeseed oil (or canola)
      • 2 tbl of dark molasses
      • 1/2 cup honey
      • 2 eggs
      • 2 tsp pure vanilla extract
      • 1/2 cup almond meal
      • 1 cup whole wheat flour
      • 1 cup flaxseed meal
      • 1/4 tsp powdered ginger
      • 1 bag Ghirardelli 60% dark chocolate chips
      1. Preheat oven to 300 degrees.
      2. Whisk together the oil, molasses, honey, eggs, and vanilla.
      3. Add almond meal.
      4. Then stir in flaxseed meal, flour, ginger, and chocolate chips. Combine well.
      5. I made these babies big. Drop heaping spoonfuls onto your prepared baking sheet. (I use parchment, but you could grease it)
      6. Bake 18-20 minutes.
      7. Cool for 10 minutes before transferring to a wire rack.
      They were moist, but not crumbly.

    • Healthy 6 ingredient No-Bake Chocolate Mousse

      Dessert for a chocoholic.

      Chocolate Mousse.

      …with a whole can of “who cares what season it is” pumpkin.

      Pumpkin has always been my favorite go-to vegetable when I need to get one into the My Foodie Call family. Although I am all about secret sneaky ingredients, I have never felt the need with pumpkin. Added to the right combo, and it is near undetectable. It adds creaminess to pretty much anything and has an absurd amount of Vitamin A and fiber. I will always sing praise for pumpkin. 


       No Bake Chocolate Pumpkin Mousse

      Start with your crust.

      My go-to, whole wheat crust. If I were super ambitious I would make my own crust…but I’m not. 🙂
      •  Ingredients
      • 1 can of pumpkin (not pumpkin pie filling)
      • 1 tsp pure vanilla extract
      • 2 tsp unsweetened cocoa powder
      • 1/4 tsp salt
      • 1 1/4 cup chocolate chips
      • 1-2 TBS honey

      Melt the chocolate in the microwave in 15-20 second intervals, stopping to stir in between.

      I use Ghirardelli 60% dark chips.

      Next pile all ingredients into a food processor. Process until it is like velvet…creamy and smooth. Pour into a pie crust. Chill in the fridge for a few hours.

      Ready for the fridge. The longer it chills the better, as it will firm up nicely.
      We do frozen cool whip. It kind of tastes like ice cream.
      Perfect combo.
      Mr. Foodie Call loved this pie. It is always good sign if a dessert can pass the man test.

    • Healthy chocolate banana bread

      Chocolate banana bread. Breakfast? Snack? You decide.

      The My Foodie Call house buys bananas 4 bunches at a time. With all of the blending, baking, and banana-soft-serving that goes on in this household, we go through them. Most of the time. On occasion, we have a few bananas that are ready to meet their maker. Here is an option for what you could try with those bananas that have sat a little too long.

      Chocolate Avocado Banana Bread

      Ingredients:

      • 3 super ripe bananas (medium-sized)
      • 1 ripe avocado (medium-sized)
      • 1/2 cup brown sugar
      • 1 tsp baking soda
      • 1 tsp baking powder
      • 3 TBS canola oil (or coconut oil for a healthier option)
      • 1 TBS applesauce
      • 1 tsp lemon juice
      • 1 tsp salt
      • 1 egg
      • 2 cups whole wheat pastry flour
      • 1/4 cup cocoa powder
      • 1/4 cup dark chocolate chips (I use Ghirardelli)

      Directions:

      Preheat oven to 350 degrees and spray a loaf pan.  Blend (or smash) together bananas and avocado until smooth.  I use a food processor for this step, but you could use a hand-held masher if you are feeling ambitious. Add in brown sugar, baking soda, baking powder, oil, applesauce, lemon juice, salt and egg.  Process in food processor or mix REALLY well (until your hand hurts).

      In separate bowl, mix together pastry flour, cocoa powder, and chocolate chips.  Gradually add in banana mixture and mix well.  The batter will be thick and sticky. If it is too dry, you can add a tad more applesauce.

      Spread into prepared loaf pan and bake in preheated oven for about 40 minutes.  A knife inserted in the middle will come out clean when its done.

      Or top with applesauce….

      Unsweetened applesauce, of course.

      Avocado+Chocolate+Banana= Winner
