    • PB & C Energy Bars (3 ingredients)

      Homemade energy bars are great, but can be time-consuming. My King Bars are a family favorite, but sometimes I get lazy. I found this 3 ingredient recipe on the Kitchn, modified it slightly and was pretty happy with the results.

      Good stuff.

      Peanut Butter & Chocolate Energy Bars

      Ingredients

      • 1 1/2 cups organic peanuts
      • 1 1/2 cups pitted Medjool dates
      • 1 cup Ghirardelli dark chocolate chips, divided into 2

      Directions

      1. Line an 8-inch x 8-inch baking pan with parchment paper.
      2. Add the peanuts and dates in a food processor. Pulse 10 times. Remove the lid and break apart any clumps of dates.
      3. Process this time continuously for 2-3 minutes until the ingredients clump together.
      4. Add 1/2 of the chocolate to the peanut-date mixture.
      5. Replace the lid and pulse a couple of times to incorporate the chocolate.
      6. Transfer the mixture to the dish. Spread and press the mixture using parchment paper (so that the mixture doesn’t stick to your hands)
      7. Melt the remaining 1/2 of chocolate chips in 15-second increments in the microwave, stirring in between.
      8. Pour the melted chocolate onto the bars and spread it in a thin layer so that it covers the top.
      9. Pop the pan in the freezer for 20-25 minutes to firm.
      10. Cut into bars.
      11. Transfer them to the fridge and store them until they are devoured!

    • Spring Break Vegan Feast

      Yikes. It’s been a week since my last post. I don’t like to go that long between posts.

      Three days is usually the longest I like to go.

      We just wrapped up Spring Break. I was busy. Wish I could say busy doing what, but I guess I’ll just go with busy doing the mama thing. At least I can recall one fun thing we did.

      This event was no different from last. Different home, but still…

      Chaos ensued.

      For our meal preparation, we had three stations.

      Station 1: Our Spinach Mango Salad

      Station 2: Our Vegan Pesto Pasta

      Our "pesto" station.

      Here is the “pesto” station. That Vitamin B-12 sign was there to represent the benefits of that jar of Nutritional Yeast. I am pretty certain that the kids did not notice or care about this. At all.

      In this picture, Devyn scoops our creamy vegan pesto into our whole wheat rotini. Nice to have some older kids to help. Kind of like another grown up!

      Station 3: Sesame Cherry Chewies

      (Dessert= All the kids care about.)

      Next, our peanut butter was combined with dried cherries, oats and our dessert was born.

      Corbin stirs and scoops our chewies with precision. Well, sort of. They were pretty sticky to work with.

      We made extra peanut butter so each kid got to take some peanut butter to go.

      Mango Summer Salad

      (Adapted from Cooking With Trader Joe’s-Skinny Dish)

      Ingredients:

      • 2- 5oz bags Organic Baby Spinach
      • 12 fresh basil leaves, chopped
      • 2 ripe mango, peeled and cut into chunks
      • 2 cucumbers, peeled and cut into small chunks
      • 2 medium tomatoes
      • 2 cups frozen roasted corn, thawed
      • 2-15 oz can garbanzo beans
      • 1/2 cup balsamic white vinegar
      • 4 Tbsp Slivered Almonds

      Directions:

      1. Fine chop spinach and basil
      2. Combine all ingredients in a large salad bowl. Toss and Serve.

       Whole Wheat Rotini with Vegan Pesto Sauce

      (From Oh She Glows)

      Ingredients:

      • 2 garlic cloves, minced
      • 2 15-oz can navy/cannellini beans (1.5 cups)
      • 1 tbsp water
      • 4 tbsp nutritional yeast
      • 4-6 tbsp fresh lemon juice
      • 1/2 tsp kosher salt
      • You can add olive oil to taste if you prefer!

      For Pesto:
      Add garlic clove to processor and process until finely chopped. Now add in the rest of the ingredients to taste and process until smooth, scraping down the bowl as necessary.

      For Pasta:
      2-16 oz packages of whole wheat rotini

      Cook pasta according to package directions

      Sesame Cherry Chewies

      (From Cooking With Trader Joe’s- Skinny Dish)

      Ingredients:

      • 2 1/2 cups old-fashioned rolled oats
      • 1 1/2 cups organic natural peanut butter
      • 1 cup sesame seeds
      • 1/2 tsp salt
      • 1 cup agave nectar
      • 1 cup dried cherries

      Directions:

      1. Preheat oven to 375 degrees
      2. Mix together all ingredients in a bowl. Drop 1/2 inch balls onto a cookie sheet. Lightly press cookies to flatten slightly.
      3. Bake 8-10 minutes, until lightly browned. Watch carefully as these cookies can burn quickly.
      4. Cool on a rack.

    • Dark Chocolate Chunk Peanut Butter

      Have you tried making peanut butter yet? Seriously, it’s super easy. You just need a food processor.

      Do you have one?

      If you are just starting your health journey, BUY ONE.

      Invaluable. Seriously.

      If you have a food processor, but it’s up in the cupboards sandwiched between your ice cream maker, gravy boat, and champagne flutes you never use, dust it off and make this basic peanut butter recipe. 

      After the basic PB recipe, try this 2 ingredient Dark Chocolate Chunk Peanut Butter variation.

      3 cups of organic peanuts meets one bar of 72% Cacao Dark Chocolate. A match made in nut butter heaven.

      Whir it up. Basic how to in the link above. Easy.

      Whir it up. The PB how-to is in the link above. Easy. Then you just add your chocolate chunks and pulse 5 or 6 times to your desired “chunkiness”. 🙂

      Break your chocolate into pieces and drop into bowl. Pulse a couple of times, but do not process. You want some of the chocolate incorporated, but some chunks too.

      Make sure you PULSE not process so that some, not all of the chocolate is incorporated.

      Dark Chocolate Chunk Peanut Butter

      • 3 cups organic peanuts
      • 1 bar of Dark Chocolate (I used a bar of 1.65 oz 72%  Cacao Dark Chocolate. Remember, the higher percentage, the better!)

      1) Process peanuts until smooth, stopping to scrape the sides of the bowl as needed.

      2) Add dark chocolate and pulse 5-10 times (as desired.)

    • Healthy Fruit and Protein Snack Wrap

      Yup, those are green grapes.

      A sweet snack (or lunch).

      Remember my post about Ezeikel Bread? Guess what. Food for Life (the Ezekiel bread people) make other stuff besides bread, like these wraps.

      If you forgot what sprouted grains are better than whole wheat, go back and read the link above.

      Sprouted Grain Tortillas

      Of course you do not have to use Ezekiel Tortilla. If you are just starting your health journey, start small and buy straight up whole wheat tortillas. Still be delish. :).

       Try this yummy dessert-snack-breakfast-could be a meal recipe by following these directions.

      Healthy Fruit and Protein Wrap

      Ingredients

      For the spread:

      • 6-7oz  silken firm tofu (Eyeball it. Don’t stress on it being exact. It’ll still work.)
      • 3 Tbs. natural peanut butter (No Jif, Skippy or any of that other nonsense. Your peanut butter should just be peanuts. And maybe some salt.)
      • 1 tsp chia seeds
      • 3 Tbs. Honey
      • 2 tsp cinnamon

      1) Mash it really good OR process in the food processor until creamy (what I did)

      For the wrap:

      • 1 package sprouted tortilla (or whole wheat tortilla)
      • 2-3 apples, shredded or fine chopped (I used granny smith, but use what you have!)
      • 1 cup seedless grapes, halved
      • 6 halved red seedless grapes

      1) Spread tofu/peanut butter mixture on tortilla.

      2) Place grated apple and grapes on top.

      3) Roll up tortilla, folding in sides as you go.

      4) Slice and serve.

      Kids can easily help with this one too.

    • King Bars. A pre-workout, post-workout, or even “sitting-on-your-couch” energy bar.

      We all know how to make and break New Year’s resolutions, right? Don’t give up just yet. This bar is worth hanging onto that new workout regimen. Although if you have already thrown in your sweaty towel, not to worry, you can still eat these from the couch.

      Here is a recipe that I have been making every so often for a few years now for Mr. Foodie Call. My original intention for these protein/energy bars were for him to use these as a post-workout snack.

      Why? They are loaded with protein. We all know about eating protein after a workout, right?

      Protein aids in  muscle repair, yada yada yada…

      But Mr. Foodie Call started eating them before working out. Well it does have oats and chia seeds. Energy powerhouses. In short: Anytime of day would work for eating up these bad boys. Including your Bachelor viewing. That drama requires LOADS of energy.

      A healthy bar.

      King Bars

      Ingredients:

      • 1 cup rolled oats (not quick oats, old-fashioned oats)
      • 1 cup puffed rice cereal (Plain jane, not the sugary kind. These bars are sweet enough on their own. Trust me)
      • 1/2 cup vanilla protein powder (I used vanilla soy protein from Trader Joes)
      • 1/2 cup peanut butter (or any other nut butter)
      • 2 tsp vanilla extract
      • 1/2 tsp cinnamon
      • 3/4 cup honey
      • 1/4 cup gogi berries (or raisins)
      • 2 tablespoons chia seeds (why do I use chia so much? A reminder here)
      • 1/4 tsp salt
      • 2/3 cup dark chocolate chips (get at least 60% dark chocolate for the antioxidants. I like Ghirardelli.)

      Directions:

      1. In a large bowl, mix together dry ingredients
      2. In a medium bowl mix together the honey and nut butter. Melt in microwave for 35-45 seconds. Stir in the vanilla.
      3. Pour wet mixture on top of dry and stir well.
      4. Press into a pre-sprayed pan with wet fingers, because yes, it’s sticky!
      5. Melt chocolate in microwave and spread evenly on top of the bars.
      6. Freeze for 10 mins. and cut into bars. Wrap individually. Store in the fridge or freezer. I do the freezer.

      When to eat King Bars?

      Use these bars as fuel. Yes, these can be eaten whenever but ideally? Get off the couch and these are geat pre or post-workout.

      How to eat?

      Store these individually wrapped in the freezer. When you are ready to eat one, thaw it at room temp for 5 to 15 minutes, and devour.
