Kind of like a “waffle banana split” minus the ice cream. hmm…maybe for another post.

      Getting started:

Thaw your berries and save those juices.

Thaw frozen berries and save those juices.

      Gather up some chocolate chips.

      Gather up some chocolate chips.

      Thin-slice your bananas.

      Thin-slice your bananas.

      A whole plate of awesomeness.

      A whole plate of awesomeness.

      On to the waffles.

Make them as instructed by your waffle maker.

Or you can use store-bought waffles. Just make sure you buy something whole grain!

      Ingredients

      • 2 waffles
      • Bananas (sliced long)
      • Frozen strawberries (thawed so that you can take advantage of their juices)
      • Chocolate chips
      • Maple syrup (optional)

      1) Stack bananas, chocolate chips and strawberries on one side.

At this point you can either drizzle remaining strawberry juice or add optional maple syrup.

At this point you can either drizzle the fruits with the liquid left behind from the strawberries or add optional maple syrup.

Or add more chocolate chips for good meausre. Nom, nom, nom.

Or add more chocolate chips for good measure…

      2) Devour. Kids like these babies.

      Blueberry pancakes. A classic.

      Blueberry pancakes. A classic.

      Whole grain? check.

      Dairy Free? check.

      Egg free? check.

      Vegan? check.

      Whole-grain Blueberry pancakes

This recipe could be “halved”, but I always make extra for the next day’s breakfast.

      Ingredients:

      • 2 cups whole wheat flour
      • 2 tablespoons sugar
      • 4 tablespoons baking powder (yes, a lot, but it helps with the rising!)
      • 1/4 teaspoon salt
      • 2 cups almond milk
      • 4 tablespoons grapeseed oil
      • 1 cup frozen blueberries

      Directions:

      1. Spray your pan and set stove  to medium heat.
      2. Combine the first four ingredients in a bowl.
      3. Add the almond milk and grapeseed oil to your mixture.
      4. Stir in blueberries.
      5. Mix until barely smooth. (It will bubble and be slightly lumpy. Don’t worry!)
      6. Pour 4 inch rounds onto pan.
      7. Flip when you see bubbles in the middle of the pancake.
      8. Enjoy!

      • 1/2 yellow onion, diced
      • 2 cloves garlic, minced

      • 1 can organic black beans, rinsed and drained
      • 1 cup salsa

    • Healthy Chocolate Chip Waffles for teen girls

Posted at 8:00 pm by myfoodiecall

Food is always an interesting discussion when the My-Foodie-Call kids have friends over.

There is always lots of negotiating when it comes to food. They are always worried about my serving “embarrassing food”. Sad that REAL food equates to embarrassing. I try to compromise, but refuse to conform.

So we had 5-thirteen year old girls at our house Friday night.

      What to serve. Hmmm.

While I did negotiate and order pizza and soda, you better believe it came paired with cut up veggies and hummus.

(Not that they even touched it :)….)

      Breakfast was a different story…

      Love waffle makers.

The My-Foodie-Call daughter wanted waffles for breakfast.

      She got waffles for breakfast.

This recipe satisfied 5 hungry teenagers.

      Healthy Chocolate Chips Waffles

      • 1/3 cup butter, melted
      • 1/3 cup coconut oil
      • 2 cups almond milk
      • 2 eggs, beaten
      • 4 tablespoons orange juice
      • 2 teaspoons vanilla extract
      • 3 cups whole wheat pastry flour
      • 4 teaspoon baking powder
      • 1 teaspoon salt
      • 4 tablespoons  sugar
      • Dark Chocolate chips

      Instructions

      1. Melt butter and coconut oil in the microwave.
      2. In a medium bowl, add butter/coconut oil mixture to milk, eggs, orange juice and vanilla.
      3. In a large bowl, mix dry ingredients.
      4. Combine wet and dry ingredients.
      5. Stir until combined. It will be a tad lumpy. Try not to over stir.
      6. Spoon batter onto heated, sprayed waffle iron.
      7. Sprinkle batter with chocolate chips.
      8. Bake until golden brown.

I made a bunch and kept them warm in the oven until the girls were ready.

They were a hit. Think it was the chocolate.

It's all about the chocolate chips...

      Chocolate chips make everything better.

These are great as is or with maple syrup.

    • Whole Grain Banana Nut pancakes

      Story goes like this.

Mr. Foodie Call goes on a ridiculously long bike ride…like 40 miles or something. No thanks.

Anyhow,  I know the way to his heart is to have a nice breakfast waiting for him when he gets back from said ridiculously long bike ride.

      Mr. Foodie Call loves these.

      Mr. Foodie Call loves these.

Although I can’t always make that a reality, when I can I try to hook a brother up. He loves Banana Nut Pancakes. The kids? They tend to balk at the idea of banana in their pancakes, and even throw mini tantrums at the idea of walnuts topping their pancakes.

Luckily those nuts are easy enough to omit because they are not directly in the pancake. I kept the bananas in the pancakes, but not as a topping. A compromise.

      For the kids.

      For the kids.

      Banana Nut Pancakes

      INGREDIENTS

      • 1 cup whole wheat flour
      • 1 cup rolled oats
      • 1 tablespoon baking powder
      • 1/2 teaspoon salt
      • 1 egg, beaten
      • 1 teaspoon cinnamon
      • 1 tablespoon honey
      • 1 cup almond milk
      • 1 teaspoon vanilla extract
      • 1 banana, finely chopped (for the batter)
      • Cooking spray for pan
      • 1/4 cup walnuts, chopped
      • 1 banana, sliced (for topping)

      DIRECTIONS

      1. In a bowl, mix the flour, oats, baking powder, salt, egg, cinnamon, and honey.
      2. Stir in the almond milk.
      3. Stir in the bananas.
      4. Spray your skillet.
      5. Pour batter into 4-inch-ish circles. Flip when bubbly.
      6. While the pancakes are cooking, hand chop the walnuts on a cutting board with a sharp knife.
      7. Slice another banana for topping.
This is two pancakes, layered with bananas and chopped walnuts.

Here are two pancakes, layered with bananas and chopped walnuts.

Sweet enough on its own, or add some syrup for an extra something something.

      Anything to keep the peace.

      Anything to keep the peace.

Curious, do you get stuck modifying recipes for your families? Or are your kids pretty compliant?
