    • Healthy Fruit and Protein Snack Wrap

      Yup, those are green grapes.

      A sweet snack (or lunch).

      Remember my post about Ezeikel Bread? Guess what. Food for Life (the Ezekiel bread people) make other stuff besides bread, like these wraps.

      If you forgot what sprouted grains are better than whole wheat, go back and read the link above.

      Sprouted Grain Tortillas

      Of course you do not have to use Ezekiel Tortilla. If you are just starting your health journey, start small and buy straight up whole wheat tortillas. Still be delish. :).

       Try this yummy dessert-snack-breakfast-could be a meal recipe by following these directions.

      Grate your apple. Or fine chop it if you are on a time crunch.

      Healthy Fruit and Protein Wrap

      Ingredients

      For the spread:

      • 6-7oz  silken firm tofu (Eyeball it. Don’t stress on it being exact. It’ll still work.)
      • 3 Tbs. natural peanut butter (No Jif, Skippy or any of that other nonsense. Your peanut butter should just be peanuts. And maybe some salt.)
      • 1 tsp chia seeds
      • 3 Tbs. Honey
      • 2 tsp cinnamon

      1) Mash it really good OR process in the food processor until creamy (what I did)

      For the wrap:

      • 1 package sprouted tortilla (or whole wheat tortilla)
      • 2-3 apples, shredded or fine chopped (I used granny smith, but use what you have!)
      • 1 cup seedless grapes, halved
      • 6 halved red seedless grapes

      1) Spread tofu/peanut butter mixture on tortilla.

      2) Place grated apple and grapes on top.

      3) Roll up tortilla, folding in sides as you go.

      4) Slice and serve.

      Kids can easily help with this one too.

      Start with this.

      Get melting.

      Get choppin.

      Get chopping.

      Mix the two.

      Mix well.

      Pop the whole thing in the freezer

      Chilled Chocolate Oatmeal Chewies

      Ingredients:

      • 1 cups rolled oats
      • 1/2 cups Ghirardelli dark chocolate chips
      • 2 ripe bananas (don’t be afraid of the brown ones)
      • 2 tsp pure vanilla extract
      • 2 tbsp chia seeds
      • 2 tablespoon agave nectar

      Directions:

      1. In a microwave safe bowl, melt the chocolate chips for about 60 seconds. Stir. Repeat with 15 second intervals until mostly melted.

      2. Fine chop the banana and mix in with the chocolate.

      3. Stir in with the rest of the ingredients until fully incorporated.

      4. Line a muffin tin with 12 muffin liners. Freeze for about 1 hour or until firm.

      Chocolate & Oats. Kind of obsessed.

      Make em and freeze em.

      That way you can attempt the one at a time thing.

    • Slow Cooker Blueberry Applesauce

      Blueberry applesauce (even when it's not in season)

      Bought a bunch of apples. Like 3 bags. Just felt like it. Here is where some of them went.

      Slow Cooker Blueberry Applesauce 

      Ingredients

      • 2 lb bag of organic apples (I used pink lady) Core them, slice them, and leave the peel on because yes, you bought organic, right??
      • 1 cup frozen blueberries
      • 1  box apple juice
      • 1 tablespoon fresh lemon juice
      • 1 teaspoon pure vanilla extract (not the fake stuff!)

      Directions

      1. Add all ingredients to your pre-sprayed slow cooker.
      2. Cover, and cook 3 hours on high or 5 hours on low, until apples are soft.
      3. Slowly add your contents into your food processor. It will be hot, so go slow. Pulse until desired consistency.

    • Healthy Sweet Potato Dip

      Sweet Potato Dip

      This sweet potato dip could double as your meal. Mad doses of vitamin A.

      Everyone loves a good dip right? Try this dip with some “healthier chips”. Agreed, this dip is no match to your ranch, but that is the old you, right? Ranch is just bad, bad news, people. Heart attack waiting to happen, okay? Rid yourself of that nonsense and never look back.

      No Trader Joe’s in your area? Another option below. Even Walmart carries this brand now.

      This brand is pretty dang good too.

      True to the name, it does “taste good.”

      But back to the dip.

      I used the TJ kind today.

      On to the dip….

      Go get your bag of sweet potatoes and get started.

      Cook em.

      Add some other stuff to the food processor and Voila….

      Healthy Sweet Potato Dip

      Ingredients

      • 3-4 small sweet potatoes (1 ¼ lb.)
      • 2 Tbs. white miso paste
      • 2 Tbs. lemon juice
      • 2 Tbs. orange juice
      • 1/8 tsp. dried ginger
      • 1 tsp. agave nectar

      Directions

      1. Pierce sweet potatoes with fork several times and bake for 45-50 minutes in 400 degree oven. (or if you are pressed for time, microwave 7 to 10 minutes, or until soft.)
      2. Cool sweet potatoes 10 minutes. Chop with skins on.
      3. Add chopped sweet potatoes to food processor with all remaining ingredients, and pulse until smooth, adding little bits of water (if necessary), to achieved desired consistency. Season with salt and pepper, to taste. Serve  with cut veggies or healthier tortilla chips.

    • Flourless Carrot Cake Bars

      Is it a carrot cake? A cookie? A granola bar? Unsure, but good anytime.

      Is it carrot cake? A cookie? A granola bar? Unsure, but good anyhow.

      I love carrot cake, minus the raisins.  Love raisins, just not in my cakes, cookies, or any other baked goods. They just do not belong there. Kind of like walnuts do not belong in brownies. Love walnuts, but just don’t mess up a moist brownie with a nut. Just my opinion.

      My daughter was freaking out when she saw these pressed into the pan. "Aren't you going to chop the carrots more???"

      I think she actually ate the most of these.

      End result? Of all the My Foodie Call family members, I think she actually ate the most of these. Probably should add more carrot next time.

      Flourless Carrot Cake Bars

      Ingredients

      • 2 1/2 cups rolled oats
      • 1 1/4 cup almond meal
      • 1 cup sugar
      • 2 teaspoons cinnamon
      • 1/2 salt
      • 1 teaspoon baking soda
      • 1/4 teaspoon baking powder
      • 1 egg
      • 1 teaspoon pure vanilla extract
      • 1 cup unsweetened applesauce
      • 1 cup shredded carrots

      Directions

      1. Preheat the oven to 350 degrees. Spray a 9×13 in pan with non-stick spray.
      2. In a large bowl, mix together the oats, almond meal, cinnamon,  salt, sugar, baking soda, and baking powder until they are well-combined.
      3. Add the egg, vanilla, and applesauce to a small bowl and whisk until combined.
      4. Add to dry mixture and stir until fully incorporated.
      5. Stir in the carrots.
      6. Spread into prepared pan and bake for 14-18 minutes.
      7. Cut into squares.
