    • Almond Butter Breakfast Cookies

      Breakfast cookies…

      I wanted to bake something portable for breakfast.

      My initial thought was to do a banana bread, but my kids are hot and cold with banana bread these days. Gotta mix things up.

      I decided to make these cookies instead. I am calling them breakfast cookies because they have whole grains, banana, and Multi-grain Cheerios. Breakfast things, right? Our “healthy” breakfast cookies ingredients also include flaxseed meal and my personal fave, almond butter. Alternately, you could substitute the almond butter for peanut butter. Your taste, your call.

      These cookies are not overly sweet, but just sweet enough that you will feel like you are having a treat for breakfast.

      Almond Butter Breakfast Cookies

      Ingredients

      • 4 tablespoons coconut oil, softened if it is cold and hardened (just pop it in the microwave for a few seconds)
      • 1 cup packed brown sugar
      • 1 medium ripe banana, mashed
      • 1/2 cup unsweetened applesauce
      • 2 eggs
      • 1 teaspoon vanilla
      • 2/3 cup almond butter
      • 1 1/2 cups white whole wheat flour
      • 1/2 teaspoon baking soda
      • 1/4 teaspoon salt
      • 1 teaspoon cinnamon
      • 1 cups rolled oats
      • 2 cups Multi-Grain Cheerios
      • 1 tablespoon flaxseed meal

      Directions

      1. Preheat oven to 350 F.
      2. Blend coconut oil, brown sugar, banana and applesauce together with an electric mixer until combined. (1 1/2- 2 minutes.
      3. Add eggs and mix until combined.
      4. Add vanilla and almond butter. Mix well.
      5. In a separate bowl, whisk together flour, baking soda, salt and cinnamon.
      6. Add flour mixture to coconut oil mixture and mix just until combined.
      7. Stir in rolled oats, Multi-grain Cheerios and flaxseed meal.
      8. Scoop out batter in cookie-sized tablespoons onto prepared cookie sheet.
      9. Bake for 17-20 minutes, or until edges are lightly browned.
      10. Remove and cool on a wire rack.

    • Molasses Chocolate Chip Cookies

      Molasses.

      Either you love it or hate it.

      I love it and I am always looking for ways to get more calcium into the body. Did you know that blackstrap molasses has calcium?

      Never mind the calcium. These cookies have a ton of other awesome ingredients.

      Just take a look at that list. Begging to be made!

      Molasses Chocolate Chip Cookies

      Ingredients:

      • 1/4 cup grapeseed oil (or canola)
      • 2 tbl of dark molasses
      • 1/2 cup honey
      • 2 eggs
      • 2 tsp pure vanilla extract
      • 1/2 cup almond meal
      • 1 cup whole wheat flour
      • 1 cup flaxseed meal
      • 1/4 tsp powdered ginger
      • 1 bag Ghirardelli 60% dark chocolate chips
      1. Preheat oven to 300 degrees.
      2. Whisk together the oil, molasses, honey, eggs, and vanilla.
      3. Add almond meal.
      4. Then stir in flaxseed meal, flour, ginger, and chocolate chips. Combine well.
      5. I made these babies big. Drop heaping spoonfuls onto your prepared baking sheet. (I use parchment, but you could grease it)
      6. Bake 18-20 minutes.
      7. Cool for 10 minutes before transferring to a wire rack.
      They were moist, but not crumbly.

    • Guilt-free Flour-less Peanut Butter Chocolate Chip Cookies

      Here is a great recipe that is healthy and does not require a billion ingredients (always a big deterrent for me) This recipe is pretty much all over Google and Facebook for that matter so I thought I would give it a try.  Turned out great. Healthy and most people have these ingredients right there in the pantry. Assuming you have…

      Garbanzo beans. Or Chick peas. Why are there two names? Always wondered that. Anyhow garbanzo beans…Doesn’t everyone have these?

      Back to the cookies…

      Garbanzo beans and peanut butter? Protein packed. The only mistake I made in this recipe was to not double it. 😦

      You have this in your pantry, right?
      1 1/4 Cup Canned Chickpeas, rinsed and patted dry
      2 tsp Vanilla Extract
      1/2 Cup + 2 Tbs Natural Peanut Butter
      1/4 Cup Honey
      1 tsp. Baking Powder
      1/2 Cup Chocolate Chips (I used 60% Ghiradellhi chips. Why? The best. Promise.)
      What to do:
      Preheat oven to 350 degrees
      Line a baking sheet with parchment paper

      Non-stick spray. Bleck. Parchment. Even cooking, easy clean up.

      Rinse and towel blot garbanzo beans so that most moisture is gone.

      See how wet the paper towel is underneath? Blot it even more!

      Combine all ingredients in a food processor (except the chocolate chips) Process until smooth, scraping down sides as needed.
      Doesn't look like much yet. Kind of scary actually. Just wait...

      Add your chips and pulse a few more times.

      Better, right?

      Now we are in business.
      With wet hands (because it is DANG sticky) form into 1-2 inch balls (depending on how big you want them) and place on parchment paper.
      Blobs. But tasty.

      1. Bake for 10 minutes.
      2. Press down slightly with a fork.
      3. Bake for another 3-5 minutes or until solid
      Again. Should have doubled. Hate to ration cookies.
